I am in a bit of a food slump and need to healthy recipes (not so healthy ones are good too )
I thought I would start this thread in the hopes that everyone would post their favourite recipes for everyone else to try.

To get things started...Here's a simply one that I love having for lunch:

Spring mix lettuce tossed in either ranch or ceasar dressing
One chicken breast cut into strips
1/4 red pepper
1/4 green pepper
1 tbsp chopped up onion
a few grape tomatoes
mushrooms (if you like them.. i do not)
dash of lemon juice
some random spices

Cook the chicken, then add the other ingredients. (NOT the lettuce)

Toss the lettuce with ranch dressing and add the mixture from the frying pan. ENJOY mmmmm

How about pasta dishes.

Healthy:
angel hair/spaghetti (either homemade or store bought)
peppers (any color)
onions
large can of crushed tomatos
celery
carrot
garlic
basil
oregano
bay leaf
extra-virgin olive oil
balsamic vinegar
salt and pepper

Sauce
in a large sauce pan sautee 1/4 cup of olive oil with a few gloves of garlics diced an a small diced onion
after about ten minutes add one large diced carrot and one large piece of celery diced
after veggies soften up a bit add the large can of crushed tomatoes and oregano, basil, salt and pepper to taste and one or two bay leaves
sometimes I crank it up so it can reduce a little but only shortly and watch it carefully and stir it then you can turn it down to low

Veggies
a little bit of olive oil and a splash of balsami
add diced garlic and large but still small enough to eat slice of onion and sautee for a while
add sliced chunks of the pepper (they'll get slimy if you put them in the whole time)

Pasta
cook the pasta however you like it then pile it all up plate of spaghetti, pile of veggies, then top with the marinara sauce and then top with freshly grated parmesan

Unhealthy:
Fettucini or Penne Alfredo

Pint of heavy cream
1 cup of fresh parmesan
1 or 2 cloves of garlic
1 stick of unsalted butter
pasta (store bought or homemade)
salt and pepper

In a sauce pan melt the stick of butter then add some diced garlic then the heavy cream
heat for a while then slowly add the cheese
once combined add a little bit of salt, and pepper to taste
you can also add a tiny bit of nutmeg if you would like (I've never done this but I know it can accentuate the taste a little bit)

once thickened add the cooked pasta and toss to combine
